Ingredients
Scale
1/2 cup (113g) unsalted butter, melted
1 cup (200g) granulated sugar, divided
2 large eggs, divided
1 teaspoon alcohol-free vanilla extract, divided
1/2 cup (60g) all-purpose flour
1/3 cup (30g) unsweetened cocoa powder
8 oz (226g) cream cheese, softened
A few drops red or pink food coloring (optional)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides. In a medium bowl, whisk the melted unsalted butter with 1/2 cup of the granulated sugar. Whisk in 1 large egg and 1/2 teaspoon alcohol-free vanilla extract until well combined. Fold in the all-purpose flour and unsweetened cocoa powder until just incorporated, being careful not to overmix.
Step 2: In a separate bowl, beat the softened cream cheese with the remaining 1/2 cup granulated sugar until smooth and creamy. Beat in the remaining 1 large egg and 1/2 teaspoon vanilla bean paste until fully combined. If desired for a romantic touch, add a few drops of red or pink food coloring and mix until evenly colored.
Step 3: Pour about two-thirds of the brownie batter into the prepared pan and spread it evenly. Drop spoonfuls of the pink cheesecake mixture over the brownie layer. Then, dollop the remaining brownie batter in small portions in between the cheesecake spots.
Step 4: Using a butter knife or a skewer, gently swirl the brownie and cheesecake batters together to create a beautiful marbled pattern. Make sure not to overmix, as you want distinct layers and swirls.
Step 5: Bake for 30-35 minutes, or until the edges are set and a toothpick inserted into a brownie portion (avoiding the cheesecake) comes out with moist crumbs. Let the brownies cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang and cutting into squares.
Notes
Store any remaining romantic treats in an airtight container in the refrigerator, where they'll stay deliciously fresh for up to 4 days.
While wonderful chilled, let your brownies warm slightly to room temperature for about 15-20 minutes before serving to best enjoy their tender, fudgy texture.
For an extra touch of romance, serve these delightful squares with a spoonful of fresh raspberries or a light dusting of powdered sugar.
To achieve those beautiful, distinct swirls, gently drag your knife through the batters only a few times, embracing the marbled layers rather than fully blending them.
