Ingredients

  • Cheese Ravioli: 18-20 oz package
  • Heavy Cream: 1 cup
  • Sun-Dried Tomatoes (packed in oil, drained and chopped): 1/2 cup
  • Fresh Spinach: 5 oz
  • Garlic (minced): 3 cloves
  • Grated Parmesan Cheese: 1/2 cup
  • Chicken or Vegetable Broth: 1/2 cup

Instructions

  1. Step 1: Cook the ravioli according to package directions in a pot of salted boiling water. Before draining, reserve about 1/2 cup of the pasta water, then drain the ravioli and set aside.
  2. Step 2: While the ravioli cooks, heat a large skillet or pot over medium heat. Add a tablespoon of olive oil (or use some of the oil from the sun-dried tomatoes). Add the minced garlic and chopped sun-dried tomatoes and sauté for 1-2 minutes until fragrant.

  4. Step 4: Add the cooked ravioli to the skillet with the sauce. Stir in the grated Parmesan cheese until melted and the ravioli is well coated. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.
  5. Step 5: Season the creamy Tuscan ravioli with salt and freshly ground black pepper to taste. Serve immediately, garnished with extra Parmesan cheese if desired.
