Ingredients

Scale
  • 1 ½ cups almond flour
  • ¼ cup erythritol or monk fruit blend (granulated)
  • ½ cup unsweetened almond butter
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla bean paste
  • ½ teaspoon ground cinnamon
  • ¼ cup sugar-free chocolate chips (optional)

Instructions

  1. Step 1: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Step 2: In a medium bowl, whisk together the unsweetened almond butter, large egg, and vanilla powder until smooth and well combined.
  3. Step 3: In a separate larger bowl, combine the almond flour, erythritol or monk fruit blend, baking powder, and ground cinnamon. Mix thoroughly to ensure even distribution.
  4. Step 4: Add the wet ingredients mixture into the dry ingredients. Stir until a thick dough forms. If using, fold in the sugar-free chocolate chips.
  5. Step 5: Drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each cookie. Gently flatten each cookie slightly with the back of a spoon.
  6. Step 6: Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Keep your delicious cookies fresh in an airtight container at room temperature for up to 4 days, or pop them in the fridge for up to a week if you want to extend their delightful shelf life.
  • Craving that warm, just-baked feel? A quick 10-15 second zap in the microwave or a few minutes in a low oven (around 250°F/120°C) will bring back their comforting warmth beautifully.
  • These versatile cookies are wonderful on their own, but truly shine when paired with a hot cup of herbal tea, a smear of extra almond butter, or alongside a handful of fresh berries for a balanced treat.
  • For the smoothest dough, make sure your unsweetened almond butter is thoroughly stirred and at room temperature before you begin; this ensures it blends seamlessly with the other wet ingredients.
