  • Yield: 4 servings
  • Method: Stovetop
  • Cuisine: American

Ingredients

  • Graham cracker crumbs: 1 ½ cups
  • Unsalted butter, melted: ½ cup (1 stick)
  • Granulated sugar: ¾ cup (divided)
  • Cream cheese, softened: 24 oz (three 8-oz packages)
  • Nutella: 1 ¼ cups (divided)
  • Large eggs: 2
  • vanilla powder: 1 teaspoon

Instructions

  1. Step 1: Prepare the crust. In a medium bowl, combine graham cracker crumbs, ¼ cup of the granulated sugar, and melted butter until well mixed. Press the mixture firmly into the bottom of a 9×13 inch baking pan lined with parchment paper. Bake in a preheated oven at 325°F (160°C) for 10 minutes, then remove and let cool slightly.
  2. Step 2: Make the cheesecake filling. In a large bowl, beat the softened cream cheese with the remaining ½ cup of granulated sugar and vanilla bean paste using an electric mixer until smooth and creamy. Beat in the eggs one at a time, mixing on low speed until just combined, being careful not to overmix.
  3. Step 3: Assemble and bake. Pour the cheesecake filling evenly over the cooled graham cracker crust. Dollop 1 cup of the Nutella over the top of the cheesecake filling, then use a knife or skewer to gently swirl the Nutella into the cheesecake mixture. Bake for 35-45 minutes, or until the edges are set and the center still has a slight wobble.
  4. Step 4: Cool and chill. Turn off the oven, crack the door open, and allow the cheesecake bars to cool in the oven for 30 minutes. Remove from the oven and let cool completely on a wire rack. Once at room temperature, cover the pan and refrigerate for at least 4 hours, or preferably overnight, before lifting out with the parchment paper, cutting into bars, and serving.

Notes

  • Store any leftover Nutella Cheesecake Bars in an airtight container in the refrigerator for up to 5 days, or wrap well and freeze for up to 2 months for a delightful future treat.
  • For the creamiest texture and most pronounced hazelnut flavor, allow your chilled bars to sit at room temperature for about 15-20 minutes before serving.
  • Elevate each bar with a sprinkle of toasted, chopped hazelnuts, a light dusting of cocoa powder, or even a small dollop of whipped cream.
  • For a perfectly smooth and crack-free cheesecake, ensure your cream cheese and eggs are at true room temperature before mixing, and gently beat in the eggs just until combined to avoid overmixing.
