2 large sweet potatoes, peeled and diced into 1/2-inch cubes
1 tbsp olive oil
1/2 cup diced red onion
1 cup BBQ sauce (your favorite brand)
1 cup shredded cheddar cheese blend
1/2 tsp salt
1/4 tsp black pepper
Instructions
Step 1: Preheat your oven to 375°F (190°C). In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the diced sweet potatoes and cook for 8-10 minutes, stirring occasionally, until slightly tender and beginning to brown.
Step 2: Push the sweet potatoes to one side of the skillet. Add the diced chicken pieces and red onion to the other side. Season with salt and pepper. Cook for 5-7 minutes, stirring until the chicken is browned and cooked through, and the onion is softened.
Step 3: Stir the cooked chicken, sweet potatoes, and onion together to combine. Pour the BBQ sauce over the mixture and stir until everything is evenly coated.
Step 4: Sprinkle the shredded cheddar cheese blend evenly over the top of the chicken and sweet potato mixture in the skillet.
Step 5: Transfer the skillet to the preheated oven and bake for 5-8 minutes, or until the cheese is melted and bubbly. Alternatively, you can cover the skillet on the stovetop for a few minutes or place it under the broiler for 1-2 minutes to melt the cheese (watch carefully!). Serve hot.
