  • Yield: 4 servings 1x
  • Method: Stovetop
  • Cuisine: American

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 large sweet potatoes, peeled and diced into 1/2-inch cubes
  • 1 tbsp olive oil
  • 1/2 cup diced red onion
  • 1 cup BBQ sauce (your favorite brand)
  • 1 cup shredded cheddar cheese blend
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Step 1: Preheat your oven to 375°F (190°C). In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the diced sweet potatoes and cook for 8-10 minutes, stirring occasionally, until slightly tender and beginning to brown.
  2. Step 2: Push the sweet potatoes to one side of the skillet. Add the diced chicken pieces and red onion to the other side. Season with salt and pepper. Cook for 5-7 minutes, stirring until the chicken is browned and cooked through, and the onion is softened.
  3. Step 3: Stir the cooked chicken, sweet potatoes, and onion together to combine. Pour the BBQ sauce over the mixture and stir until everything is evenly coated.
  4. Step 4: Sprinkle the shredded cheddar cheese blend evenly over the top of the chicken and sweet potato mixture in the skillet.
  5. Step 5: Transfer the skillet to the preheated oven and bake for 5-8 minutes, or until the cheese is melted and bubbly. Alternatively, you can cover the skillet on the stovetop for a few minutes or place it under the broiler for 1-2 minutes to melt the cheese (watch carefully!). Serve hot.

Notes

  • Leftovers are delicious! Store any remaining skillet in an airtight container in the refrigerator for up to 3-4 days.
  • To reheat, warm individual portions in the microwave for 1-2 minutes, or for a crispier top, cover and bake in a preheated oven at 350°F (175°C) for 10-15 minutes until heated through.
  • For a complete meal, serve this hearty skillet with a simple green salad or a side of steamed broccoli to add a fresh, crisp contrast.
  • Elevate your skillet's flavor by choosing a BBQ sauce you genuinely love; a smoky or tangy brand can truly make this dish shine and reflect your personal taste.
